Escherichia coli (abbreviated as E. coli) are bacteria found in the environment, foods, and intestines of people and animals. E. coli are a large and diverse group of bacteria. Although most strains of E. coli are harmless, we don’t want them in food as they are often an indicator of poor hygiene. Some types can cause illness in humans, including diarrhoea, abdominal pain, fever, and sometimes vomiting. E. coli O157:H7 is one of the strains, and produces a powerful toxin known as Shiga which can lead to kidney failure. Some other types of E. coli infection can lead to urinary tract infections, respiratory illness, pneumonia, and other illnesses like meningitis.
